Which folders do i need for sidebars and extra bars?

All i want is the 2 side bars and the extra bar that i can mess with by making it wider and by making more than one pop up....up to 12 i think.

What folders do i need to keep for this?

"Sidebar" and "Popbar", the Popbar is dependant on "Sea", so you must leave this one - and should be able to delete the rest.... (but it maybe that these AddOns are dependant on Cosmos at this point (they should work without) in this case you should leave "Cosmos" and "CosmosSchedule" too.
